Healthy Almond Oat Christmas Cookies Gluten-Free | Dairy-Free | Naturally Sweetened



🍪 Ingredients (makes ~18 cookies):

1 ½ cups rolled oats

1 cup almond flour

½ tsp baking soda

½ tsp cinnamon

¼ tsp salt

⅓ cup coconut oil, melted (or butter if preferred)

⅓ cup pure maple syrup or honey

1 egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)

1 tsp vanilla extract

¼ cup dark chocolate chips or chopped dried cranberries

Optional: chopped nuts, unsweetened shredded coconut, or festive sprinkles


👩‍🍳 Directions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix the oats, almond flour, baking soda, cinnamon, and salt.

  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, egg, and vanilla.

  4. Combine wet and dry ingredients, then fold in chocolate chips or cranberries.

  5. Scoop ~1 tablespoon of dough onto the baking sheet and flatten slightly.

  6. Bake for 10–12 minutes, or until golden around the edges.

  7. Cool on a wire rack and enjoy!
